Unlike traditional methods that press, steak, or batter meat, the Mastering® process gently stretches meat fibers both longitudinally and laterally, preserving the fresh meat character while significantly improving taste. This innovative technique increases the meat surface area by up to 50%, resulting in a higher weight product, extended shelf life of up to eight days, and juicier, more flavorful meat.
